A Cake Batter Blondie made with only 6 ingredients!
So if you have ever visited my site before you may have noticed it has received a facelift. I am so proud of the way my site looks now. I decided to upgrade to the Foodie Pro Theme by Shay Bocks. I love the new look and the versatility with it. Now as I was updating the site I also made a visual recipe index which means I had to go back and look at all my old photos. YIKES! Boy have I learned a lot in the last couple years!
As I was taking a trip down memory lane and cringing at all my old photos I had to remind myself this blogging thing is a learning process. It also made me want to re-make some of the earlier dishes and up date the photos. The first one I wanted to re-do? These cake batter blondies.
Yikes. And I remember being SO proud of this photo. I remember thinking- great composition! great lighting! And I was all proud of the fact that I had text in the photo. Ha…well live and learn. Truly. Just look at how far I have come now…
Can you believe it has almost been exactly two years since I have posted that recipe? Man has this site grown and changed since then! I really have learned a lot, particularly in the photography department. Now I am no expert, but I definitely have come a long way. Here is what I have learned: 1. Investing in a good camera is totally worth it. A tripod is a second good investment while you’re at it. 2. There really is nothing better than natural lighting. 3. Practice, practice, practice. There is no way to get better! Just keep shooting!
This recipe comes from Sally’s Baking Addiction, a blog I have loved for years, and was an inspiration and source of ideas as I was trying to grow my baby blog these last couple years. It felt right to re-make these and do them justice. These blondies are so simple to make, and so dangerously good. Like- worth every calorie and I totally hit the gym hard tomorrow kind of good. You could always make your own homemade yellow cake mix if you would like. Hmm, maybe it’s time to update those photos as well…

These blondies also got their Irish on and were loaded up with festive green sprinkles and green and white chocolate chips. You really could make these festive for whatever the season!
- Cake Batter Blondies
- •1 box yellow cake mix
- •1/4 cup canola oil
- •1 egg
- •1/3 -1/2 cup milk
- •1/2 cup sprinkles
- •1/2 cup white chocolate chips
- Preheat oven to 350F degrees. Spray 11×7 baking pan with nonstick spray. Combine first four ingredients in a large bowl. Add the milk slowly. You want to cake batter to be as dense & thick as possible. Mix in the sprinkles and white chocolate chips. Pour into prepared baking pan, sprinkle a few more sprinkles on top, and bake for 25-30 minutes until edges are just turning brown. Allow to cool for at least 30 minutes so the center sets, before cutting into squares.
- *The blondies will look like they are not fully done because the center will be quite gooey, but that’s what you want! After about 30 minutes of cooling, they will be easy to cut using a serrated knife.
- * If you do make your own cake mix, I used 3 cups of my homemade yellow cake mix. I have read some people have used a little more- 3 1/2 cups up to 4. I would gauge your mix by the dryness. Start with 3 cups…you can always add more!
