Ok let’s talk breakfast shall we? I wake up every day hungry. Without fail. No…starving. Like barely rolling my butt out of bed, and my stomach is already giving me the signs that I need food. NOW. Anyone this way? My #1 taste tester can go hours without food. How is that possible? Like could cruise right on through to lunch. I don’t get it personally. Â And one of the breakfast options I go to most days is oatmeal.
So when I teamed up with Quaker® Oats to bring my best bowl of oatmeal as part of their Bring Your Best Bowl Contest I thought about what would make the perfect bowl of oatmeal. My mind immediately went to my favorite scone recipe that I used to make all the time at a bakery I worked at.  This dark chocolate cherry almond scone- or as I called it- black forest.  The flavor combination in this scone I still dream of. But seriously who has time to make scones for breakfast during the week? And let’s not talk about the calories. So if I could bring all those delicious flavors into my bowl of oatmeal every morning life would never be the same. Ok, a bit dramatic. I know. I just really like breakfast…
For this bowl of oatmeal, I used Quaker® old fashioned oats. You can cook this on the stove or in your microwave. The ingredients that I added could be added to their instant oats too if you are in a pinch on time. I hear ya. I decided to go the old fashioned route on the stove with almond milk. You can also cook ahead of time, and simply re-heat which is what I did- it was great for work the next day!
Once the oats were cooked I added to this oatmeal dark frozen cherries (dried cherries work, too), chocolate chunks, sliced almonds for crunch, and a touch of brown sugar for added sweetness. And the key ingredient that really brings out the almond flavor and make this bowl of oatmeal the same as those decadent almond iced scones is almond extract. Almond extract is strong stuff, so a little goes a long way. But it was what sent this bowl of oatmeal to pretty good to OMG, should this be allowed for breakfast?
Seriously who needs scones now?

What a brilliant breakfast idea!!! And since it is oatmeal, it’s of course healthy 🙂

That’s what I’m saying! It sure doesn’t taste healthy- feels like dessert which is ok in my book!
