1. Prep oven. Position a rack in the center of the oven. Preheat oven to 350oF (180oC).

PREP & PREHEAT

2. Create the crust by blending cookies in a food processor, mixing with melted butter. Firmly press the mixture into the pie plate and up the sides, ensuring a tight pack for easier slicing. Start with a dry measuring cup and finish with hands for optimal compression.

3. Bake crust. Bake the crust for 8-10 minutes then set aside to cool slightly.

BAKE THE CRUST

4. Combine egg yolks, sugar, cornstarch, and salt. In a large mixing bowl, whisk together the egg yolks, sugar, cornstarch, and salt until yellow and increased in volume. You can use a whisk or a mixer.
