Making strawberry buttercream frosting can tricky to make. You want all the flavor but achieving that can mean a runny consistency, but I’ve figured out the key to a perfect strawberry buttercream!

Freeze Dried Strawberries!

INGREDIENTS:

– 1 1/4 cups (2 1/2 sticks) unsalted butter softened – 2 1/2 cups (283 g) confectioners sugar – 1.2 ounces freeze dried strawberries – 2 tablespoons heavy cream – 2 teaspoons vanilla extract – 1/8 teaspoon table salt

1. Cream the butter first until light and fluffy.

2. Then add in the powdered sugar, with the mixer off 1/2 cup at a time. And the mix on low until combined.

3. Then increase the speed for 2-3 minutes until light and fluffy.

4. Pulse the freeze dried strawberries in a food processor until ground into a fine powder. Add to the frosting.

5. Add the vanilla extract, heavy cream, and salt. Stir to combine.

6. Mix for 8 minutes until light and fluffy.

7. When ready to use, with a pastry bag and tip attached, pipe the frosting on each cupcake.
