CHOCOLATE GUINNESS CAKE

Kick up your chocolate cake with Guinness with this easy dark chocolate Guinness cake frosted with Bailey’s Irish Cream buttercream frosting.

INGREDIENTS:

For the Cake – granulated sugar – all-purpose flour – unsweetened cocoa powder – baking powder – baking soda – salt – eggs – whole milk – vegetable oil – vanilla extract – Guinness For the frosting (this is a triple batch) – unsalted butter – confectioners sugar – Bailey's Irish Cream – heavy cream – vanilla – pinch salt

To make the cake: 1. Heat oven to 350°F. Grease and flour three 8-inch cake pans (or two 9-inch pans).

MAKE THE CAKE

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.

COMBINE DRY INGREDIENTS

3. In a second mixing bowl, whisk together eggs, milk, oil and vanilla until smooth. Add to dry ingredients, whisk until smooth. Do not overmix.

WHISK WET INGREDIENTS

4. Stir in Guinness (batter will be thin) just until combined. Pour batter into prepared pans.

ADD THE GUINNESS

5. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

BAKE THE CAKE

6. While the cake cools, make the frosting.

COOL

1. Mix butter and sugar. In a mixing bowl with an electric mixer, combine the butter and confectioners sugar. Mix on low speed at first, then increase the speed to medium until combined.

MAKE THE FROSTING

2. Add heavy cream, vanilla, Bailey's, and pinch of salt.. Mix on medium to high speed for 7-8 minutes until light and creamy. When cake is cooled frost cake and serve.
