– all purpose flour – baking soda – baking powder – salt – unsalted butter – light brown sugar – granulated white sugar – large eggs – pure vanilla extract – white chocolate chips

1. Pre-heat oven to 375oF. Prepare a baking sheet with parchment paper (or silicone baking mat).

2. Whisk together flours, baking soda, baking powder and salt into a bowl. Set aside.

3. Using a mixer fitted with paddle attachment, cream butter and sugar together until very light, about 2-3 minutes.

4.  Add eggs, one at a time, mixing well after each addition. Stir in the vanilla.

5. Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. Add chocolate and stir in, on low speed, just until combined.

6. Scoop cookie dough, using a 1-inch cookie scoop, and place on prepared cookie sheet. Bake until golden brown but still soft, 10-12 minutes. Transfer sheet to a wire rack for 10 minutes, then slip cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day.
