Smores Fudge
This easy chocolate Smores fudge recipe is creamy and delicious, and does not require a candy thermometer!

- 3 cups (355 g, 18 ounces) semi-sweet chocolate chips
- 14 ounces sweetened condensed milk
- 3 tablespoons (42 g) unsalted butter
- ⅛ teaspoon salt
- 1 ½ teaspoons vanilla extract
- 1 cup (142 g) graham crackers (about 8 crackers) plus more for sprinkling on top
- 1 cups miniature marshmallows plus more for sprinkling on top
Line an 8-inch square pan with parchment paper or foil and set aside. I like to leave an overhang so I can easily lift the fudge out and cut it into squares. In a medium heavy-duty bottomed saucepan, set over medium-low heat, combine the chocolate chips, butter and condensed milk, and salt together. Stir using a heat-resistant sturdy spatula until melted and smooth. Be sure to stir constantly so the chocolate doesn't burn. (Alternately you can do this in your microwave in 30-second intervals, stirring in between, until melted and combined). Remove from the heat and stir in the vanilla extract.
Stir in the graham crackers and marshmallows.
Spread the mixture into the prepared pan and smooth the top. Top with additional marshmallows and sprinkle on additional graham cracker crumbs. Refrigerate until firm, about 2 hours.
Using a kitchen torch, lightly toast the marshmallows on top. Or you can place the pan under your broiler for 1 minute (keep a close eye so they don't burn! Yours may not take a full minute) to toast. Remove the fudge from the pan, lifting out the paper, and then cut into squares and serve.
- Storage: You can store the homemade chocolate fudge will last in a covered container, at room temperature for up to 2 weeks, or in the fridge for up to 3 weeks.
- Freezing: Because of the marshmallows I don't recommend freezing.
- Chocolate - I used semi-sweet chocolate but you can also use milk chocolate chips (but this will make for a sweeter fudge). You can use chips or baking chocolate bars finely chopped up. Be sure to use quality chocolate here as the chocolate flavor will really stand out.
- Condensed milk - Make sure you are grabbing a can of sweetened condensed milk and NOT evaporated milk (they are not the same thing and will make for a runny fudge)
- Butter: If you only have salted butter, omit the salt in the recipe.
