Ingredients

  • 1 cup peanut butter
  • 21 oreo cookies
  • 1 package of Ghiradelli melting wafers
  • sprinkles optional

Instructions

  • In your food processor combine your peanut butter and oreo cookies. Process until smooth. You may need to stop and use a spatula and scrape down the sides a few times.
  • Prepare a cookie sheet with parchment paper. Using a 1-inch cookie scoop, scoop the cookie mixture into balls. Place them on your cookie sheet. They do not need to be spaced out at the moment. Place them in your freezer until frozen (I covered mine with plastic wrap and left them overnight).
  • Once frozen shape the truffles into an even round shape by simply rolling them between your palms. Now prepare your chocolate wafers. Place the package of wafers into a microwave safe bowl and microwave in 30-second intervals. Be sure to stir between each interval. Once completely melted, you can now roll your truffles. Using a fork, lower your truffle into the mixture, coating it in chocolate. Place on your cookie sheet, sliding the truffle off the fork gently with a toothpick. Repeat with the remaining truffles, being sure to space them out. While the chocolate is still warm, sprinkle with sprinkles if you so choose!

Notes

* I froze mine overnight, but you may not need as long. 1-2 hours I'm sure would suffice. I simply had no time to roll mine in chocolate that day! If you do leave them overnight, covering them would be best.
* I used a gluten free oreo cookie package which had 21 oreos in the package, if you use real Oreos, the package contains more cookies. You can count out 21, or simply use the whole package you just may need to add additional peanut butter to your taste and desired consistency.
*You could use candy dipping tools, but I found a fork and toothpick works fine if you are in a pinch.
