Homemade Cornbread Mix

Only 5 ingredients to make your own homemade cornbread mix to have ready whenever you want to make up some corn muffins!

Ingredients

For the Mix

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons salt

To Make Muffins add

  • 1/4 cup vegetable oil
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons mild honey
  • 2 large eggs lightly beaten
  • 1 cup milk

Instructions

  • To make your mix: Combine your dry ingredients in a bowl. Whisk to combine. Store in a ziploc bag or container until ready to use.
  • When ready to use: Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. Combine oil, butter, and honey; stir in eggs and milk. Stir oil mixture into cornmeal mixture. Divide batter evenly among baking cups.
  • Bake until tops are golden and a toothpick inserted into the centers comes out clean, about 18 minutes. Let cool for 10 minutes.

Notes

This recipe is great to double, triple, etc.! Just store each batch in a seperate ziploc bag. It helps to write the wet ingredients and baking instructions on the outside, so you will be all ready to use when the time comes!
