1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or baking mat. Combine ingredients through coconut in a mixing bowl and set aside.
2. In a medium saucepan, heat honey, oil, and vanilla over low heat just to warm.
3. Pour the honey and oil mixture over the oat mixture. Stir to combine.
4. Spread evenly on prepared cookie sheet.
5. Bake for 20 to 25 minutes until golden brown, stirring once halfway through cooking.
6. Once cooled, add in cranberries.
