Red Velvet Mini Chip Snowball Cookies
A twist on the classic snowball cookie- a red velvet chocolate chip version that can be made in one bowl!

- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 cup butter softened
- 2 Tablespoons cocoa powder
- 1 teaspoon vanilla
- 1 ounce red food coloring more if you want a deeper red color
- 1 cup mini chocolate chips
- powdered sugar
Heat oven to 325°F.
Combine all ingredients except mini chocolate chips and powdered sugar in bowl. Beat at low speed, scraping bowl occasionally, until well mixed. With a spatula by hand, stir in the chocolate chips.
Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets (I prefer using parchment paper) Bake 18-25 minutes or until very lightly browned. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.
