Preheat oven to 350°F (177°C). Lightly grease or butter two 10- ounce ramekins. (see note if using different size ramekins).
In a small bowl stir together the apples, brown sugar, flour, cinnamon, nutmeg and salt. Divide into the two ramekins. 2 medium peeled apples 2 Tablespoons packed light or dark brown sugar 1 Tablespoon all-purpose flour ½ teaspoon ground cinnamon ⅛ teaspoon ground nutmeg pinch salt
In a second small bowl, whisk together the flour, brown sugar, and cinnamon together. Cut in the cold butter until a crumbly mixture forms. You can use a pastry cutter or simply use squish the butter in with your fingertips. Stir in the oats. Sprinkle over the filling. 3 Tablespoons all-purpose flour 3 Tablespoons packed light or dark brown sugar ¼ teaspoon ground cinnamon ¼ teaspoon salt 2 Tablespoons unsalted butter ¼ cup (25 g) old fashioned oats
Bake for 25-30 minutes or until the topping is golden brown and the apples are cooked through and tender. Remove from the oven, place on a wire rack, and allow to cool for 5-10 minutes before serving. Serve warm, room temperature, or cold; plain or with salted caramel and/or vanilla ice cream.
Cover leftovers and store in the refrigerator for up to 5 days.
