Apple Crisp For Two

An apple crisp perfect for two people! With cinnamon apples and topped with a buttery oat crumble.

Ingredients

Filling

  • 2 medium peeled apples cut into small chunks that are 1/4 – 1/2 inch thick
  • 2 Tablespoons packed light or dark brown sugar
  • 1 Tablespoon all-purpose flour spooned & leveled
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • pinch salt

Topping

  • 3 Tablespoons all-purpose flour spooned & leveled
  • 3 Tablespoons packed light or dark brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 Tablespoons unsalted butter cold and cubed
  • ¼ cup (25 g) old fashioned oats
  • optional: salted caramel and vanilla ice cream for serving

Instructions

  • Preheat oven to 350°F (177°C). Lightly grease or butter two 10- ounce ramekins. (see note if using different size ramekins).
  •  In a small bowl stir together the apples, brown sugar, flour, cinnamon, nutmeg and salt. Divide into the two ramekins. 2 medium peeled apples 2 Tablespoons packed light or dark brown sugar 1 Tablespoon all-purpose flour ½ teaspoon ground cinnamon ⅛ teaspoon ground nutmeg pinch salt
  • In a second small bowl, whisk together the flour, brown sugar, and cinnamon together. Cut in the cold butter until a crumbly mixture forms. You can use a pastry cutter or simply use squish the butter in with your fingertips. Stir in the oats. Sprinkle over the filling. 3 Tablespoons all-purpose flour 3 Tablespoons packed light or dark brown sugar ¼ teaspoon ground cinnamon ¼ teaspoon salt 2 Tablespoons unsalted butter ¼ cup (25 g) old fashioned oats
  • Bake for 25-30 minutes or until the topping is golden brown and the apples are cooked through and tender. Remove from the oven, place on a wire rack, and allow to cool for 5-10 minutes before serving. Serve warm, room temperature, or cold; plain or with salted caramel and/or vanilla ice cream.
  • Cover leftovers and store in the refrigerator for up to 5 days.

Notes

  • Ramekins: If you don’t have 10-ounce ramekins you can divide the filling and topping to smaller ramekins - may make 3-4 instead. Reduce baking time slightly. I also baked this in a small loaf pan as well - same time to cook.
  • Apples: I like using Honeycrisp, Granny Smith, Pink Lady, or a combination for the best balance of sweet and tart flavors. I don't like using MacIntosh as it becomes mushy. And Red Delicious can be bitter.
  • Unsalted butter: Make sure the butter is cold so the topping bakes up crumbly instead of melting into the flour. You can also use salted butter just omit the added salt.
  • Old-fashioned oats: Quick oats will create a softer topping.
