Hot Fudge Sauce

Ingredients

  • cup (160 ml) heavy cream
  • ½ cup (156 g) light corn syrup
  • cup (67 g) granulated sugar
  • ¼ cup (21 g) unsweetened natural cocoa powder
  • ¼ teaspoon salt
  • 6 ounces semi-sweet or bittersweet chocolate *see note
  • 2 tablespoons (28 g) unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  • Bring cream, corn syrup, sugar, cocoa, salt, and chocolate to a boil in a 1 to 1 1/2-quart heavy saucepan over moderate heat, stirring, until chocolate is melted. ⅔ cup (160 ml) heavy cream ½ cup (156 g) light corn syrup ⅓ cup (67 g) granulated sugar ¼ cup (21 g) unsweetened natural cocoa powder ¼ teaspoon salt 6 ounces semi-sweet or bittersweet chocolate
  • Reduce heat and cook at a low boil, stirring occasionally, 5 minutes, then remove from heat.
  • Add butter and vanilla and stir until smooth. Pour into a container to store. Cool sauce to warm before serving. 2 tablespoons (28 g) unsalted butter 1 teaspoon vanilla extract

Notes

  • Can be made a week ahead of time. I stored mine in a glass jars (two 8 ounce jars) and kept in the fridge. Just reheat before serving.
