Snickers Cheesecake bars are way easier than making a whole cheesecake and surefire crowd pleaser. With an Oreo cookie crust and chopped up Snickers folded into the cheesecake batter, what’s not to love about these bars?

When it comes to making cheesecakes I feel like I’m gearing up for a long cardio session at the gym. Like ok, I know it’ll be worth it in the end, but seriously some days I just can’t find the energy to do it. And then there is that whole water bath thing. I’m talking about cheesecake not at the gym in case you’re confused.
But cheesecake bars. Now we’re talking.
Cheesecake bars is everything you love about cheesecake minus the hassle. And you can pick it up and eat it. Leaving the other hand free for a glass of wine. Milk? Whatever you need to wash these bad boys down.
These bars come together in less than 30 minutes. You running to the kitchen yet to make these? I love recipes that let me get my bake on, but also don’t eat up my whole day. I mean I love those recipes too, but sometimes you just need something baked from scratch without taking up a whole lot of time. You feel me right?
Ok so let’s get to making these snickers cheesecake bars. You know so we can get to eating them.
How To Make Snickers Cheesecake Bars
I adapted these bars from King Arthur Flour by making a few small changes. The cheesecake bar itself was perfect. But I wanted to add in the Snickers and use an Oreo cookie crust instead.
So to make the Oreo cookie crust, just simply throw 20 cookies into your food processor. Once crumbled, add in some melted butter. And that’s it. 2 ingredients and done. Just press this into your 8×8 baking pan and partially bake it in a 375°F for 8-10 minutes.
While the crust is baking, go ahead and make your cheesecake batter. You want to use 2 8-ounce blocks of room temperature cream cheese. I made this in my stand mixer, but you could use a hand mixer if that’s all you got. Add your sugar to the cream cheese and mix together until smooth. Then be sure to not keep mixing after it’s smooth to not add too much air into the batter.
You want to then add either heavy cream or sourcream (I made these bars with both and either one worked great!), 3 large room temperature eggs, and your vanilla extract. If you need to get your eggs to room temperature fast, just simply place them in a bowl of warm water for 10 minutes.
All that’s left is to stir in your chopped up Snickers bars! I bought a bag of fun size Snickers and added about 15-17 of those bad boys. I just chopped up each little bar into about 5-6 pieces.
And that’s it. Time to bake! Lower your heat on the oven and bake these in a 325°F oven.
My bars took about 40-45 minutes to bake. Your oven might be different than mine. So look to see if the filling is set but still soft in the center.Â
When they are done, allow them to cool for about 30 minutes to an hour. I couldn’t help myself and drizzled a bit of hot fudge and caramel sauce over them. But of course they are delicious as is. Or you could also top them with even more Snickers. I mean more snickers? Why not, right?
Tips For Making These Snickers Cheesecake Bars
- Make sure to use softened cream cheese so the mixture comes together easily. If the cream cheese is too cold, then it will require to whip the mixture more adding more air into the batter which can change the texture. We want smooth and creamy!
- Make sure the eggs are also room temperature. If you add the cold eggs to the cream cheese, it will seize up the cream cheese. I simply add the eggs to a bowl of warm water for 10 minutes before I use them.
- Don’t overbake these! You want the center of these bars to soft, and a bit jiggly. It will firm up as they cool.
So when you don’t feel like getting the energy up to make a cheesecake, but cheesecake is what the day calls for. Opt for bars instead. With Snickers. Because, um…do I need to have a reason for why to add Snickers?
I think not.

To Make These Snickers Cheesecake Bars You Will Need:
- food processor
- 8×8 baking pan- this is pan that I 8×8 baking pan
- Stand or hand mixer– this is the stand mixer I own
- Silicone spatula
- Dry measuring cups and spoons
Ingredients
For the cookie crust:
- 20 Chocolate Sandwich Cookies oreos
- 5 tablespoons butter melted
- 16 ounces 2 packages cream cheese, room temperature
- 1 cup granulated sugar
- 1/4 cup heavy cream or sour cream
- 3 large eggs
- 2 teaspoons vanilla extract
- 15 small Snickers bars chopped
Instructions
- Preheat the oven to 375°F.
- To make the crust: Place cookies in a food processor and pulse until crumbled. Add in your melted butter and pulse until it comes together.
- Press into the bottom and about 1/2" inch up the sides of an 8" x 8" square pan.
- Bake the crust for 8 to 10 minutes, until set.
- Remove the crust from the oven and cool for a few minutes while you lower the oven temperature to 325°F.
- To make the batter: Mix the cream cheese and sugar together until smooth.
- Add the cream, eggs, and vanilla mix until combined, scraping the sides and bottom of the bowl as you mix. Fold in the Snickers bars.
- Spoon the batter into the crust.
- Bake the bars for about 40minutes, until the filling is set but still soft in the center. An instant-read thermometer, inserted into the filling about 1" in from the edge, will read about 180°F.
- Remove the bars from the oven, and cool at room temperature for 30 minutes. Refrigerate until ready to serve. Top with either more Snickers, ganache, or caramel, or simply enjoy as is!
