Snickers Cheesecake Bars

Ingredients

For the cookie crust:

  • 20 Oreo cookies
  • 5 tablespoons (70 g) unsalted butter melted

For the cheesecake filling

  • 16 ounces (2 packages) cream cheese, room temperature
  • 1 cup (200 g) granulated sugar
  • ¼ cup (60 ml) heavy cream
  • 3 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 15 small Snickers bars chopped

Instructions

  • Preheat the oven to 375°F (190℃).
  • Place cookies in a food processor and pulse until crumbled. Add in your melted butter and pulse until it comes together. 20 Oreo cookies 5 tablespoons (70 g) unsalted butter
  • Press into the bottom and about 1/2" inch up the sides of an 8" x 8" square pan.
  • Bake the crust for 8 to 10 minutes, until set.
  • Remove the crust from the oven and cool for a few minutes while you lower the oven temperature to 325°F (163℃)
  • Mix the cream cheese and sugar together until smooth. 16 ounces (2 packages) cream cheese, room temperature 1 cup (200 g) granulated sugar
  • Add the cream, eggs, and vanilla mix until combined, scraping the sides and bottom of the bowl as you mix. Fold in the Snickers bars. ¼ cup (60 ml) heavy cream 3 large eggs 2 teaspoons vanilla extract 15 small Snickers bars
  • Spoon the batter into the crust.
  • Bake the bars for about 40minutes, until the filling is set but still soft in the center. An instant-read thermometer, inserted into the filling about 1" in from the edge, will read about 180°F.
  • Remove the bars from the oven, and cool at room temperature for 30 minutes. Refrigerate until ready to serve. Top with either more Snickers, ganache, or caramel, or simply enjoy as is!

Notes

  • Make sure to use softened cream cheese so the mixture comes together easily. If the cream cheese is too cold, then it will require to whip the mixture more adding more air into the batter which can change the texture. We want smooth and creamy! 
  • Make sure the eggs are also room temperature. If you add the cold eggs to the cream cheese, it will seize up the cream cheese. I simply add the eggs to a bowl of warm water for 10 minutes before I use them. 
  • Don't overbake these! You want the center of these bars to soft, and a bit jiggly. It will firm up as they cool.
