White Chocolate Funfetti Bars

These white chocolate funfetti bars can be made in one bowl! They are simple to throw together and a total crowd pleaser.

I think no dessert goes over better with my friends then when there are sprinkles are involved. And I have learned over the years that I could spend hours in the kitchen whipping up some fancy complicated dessert. But in the end it’s my bar cookies that always get gobbled up first.

Like these M&M cookie bars. Same thing. People clamoring for the last bar. Wanting leftover. Well these white chocolate funfetti bars were no different.

And so when I can whip these up in one bowl in no time. You know this is going to become a favorite around here.

What Is Funfetti?

Ok s0 in case you have been living under a sprinkle free rock, funfetti is a cake where sprinkles are baked into the batter. The crazy, according to the NY Times, began in 1989 when Pillsbury introduced Funfetti Cake Mix to the world. Instead of adding sprinkles to the top for decoration they were baked right into the batter.

Being an 80s child myself, obviously I have a deep love that goes way back.This time we are mixing it up and creating funfetti bars.

How To Make These Funfetti Bars

These funfetti bars only need a mixing bowl and  a 9×13 pan to bake them in. I adapted the recipe from my favorite baking magazine, Bake From Scratch. I thought the addition of white chocolate chips was needed and I was right. It sent them over the top.

Step 1: Cream your butter, granulated sugar and cream cheese together.

In the bowl of your stand mixer, you want to cream the butter, sugar, and cream cheese together until light and fluffy. This will take about 2 to 3 minutes on medium speed.

Pro Tip: Make sure your cream cheese and butter are at room temperature before starting this step so that the sugar is able to aerate the butter and cream cheese. If the butter or cream cheese or too cold, then the sugar crystals can “punch” their way through the butter incorporating air properly.

Step 2: Add Your Egg And Extracts.

Once the funfetti bar mixture is creamed properly, you can add in your egg and vanilla extract.

Pro Tip: Make sure the egg is at room temperature so it can be incorporated evenly.

Step 3: Add Your Dry Ingredients

Then once the egg has been mixed in properly add in the flour, baking powder, and salt.

No need to do this in a seperate mixing bowl! The batter will be very thick at this point.

Step 4: Stir In Chips And Sprinkles

Of course the fun part! Stir in the sprinkles and white chocolate chips.

Step 5: Spread Batter Into Pan And Bake!

Once your batter is ready, then go ahead and spread the batter into your prepared 9×13 dish. It’s a thick batter so spreading can be a bit difficult.

Pro Tip: Use a piece of plastic wrap to press the batter into the pan. Take a piece of plastic wrap give one side a quick spray of non-stick spray and place on top of the batter and press in with your hands.

Tips For Making These Funfetti Bars

  • Use parchment paper to line your pan with. This will help to easily lift the bars out of the pan and then cut them into squares.
  • Be sure to measure your flour correctly. Over-measured flour could result in a dry funfetti bar. For best accuracy you would want to use a kitchen scale.
  • Make sure to not cream your batter for too long. Over-creaming will result in too much air being incorporated and you could end up with a cakey funfetti bar instead.
  • Before serving, give them a dusting of powdered sugar!

Ingredients

  • 1 cup 227 grams unsalted butter, softened
  • 1 cup 225 grams cream cheese, softened
  • 1ยฝ cups 300 grams granulated sugar
  • 1 large egg 50 grams, room temperature
  • 2 teaspoons 8 grams vanilla extract
  • ยฝ teaspoon 2 grams almond extract
  • 2ยฝ cups 313 grams all-purpose flour
  • ยฝ teaspoon 2.5 grams baking powder
  • ยฝ teaspoon 1.5 grams kosher salt
  • 1 cup 183 grams rainbow sprinkles*
  • 1 cup white chocolate chips
  • Confectionersโ€™ sugar for dusting

Instructions

  • Preheat oven to 350ยฐF (180ยฐC). Line a 13x9-inch baking pan with parchment paper, and lightly grease.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter, cream cheese, and granulated sugar at medium speed until creamy, 2 to 3 minutes, stopping to scrape sides of bowl. Add egg and extracts, beating until combined. Add fl our, baking powder, and salt, beating until combined. (Batter will be thick.) Stir in sprinkles. Spread dough into prepared pan using a metal spatula.
  • Bake until center is set, 25 to 30 minutes. Let cool completely. Dust with confectionersโ€™ sugar. Cut into triangles or squares.

Notes

    Making these right now, but I didn’t see in the recipe where or when to add the chocolate chips. So I added them at the same time as the sprinkles.
