These mini turtle cheesecakes have everything you love about a classic turtle cheesecake, but in individual servings! Each mini cheesecake starts with a buttery graham cracker crust and a rich, creamy cheesecake filling, then gets topped with gooey caramel sauce, chocolate ganache, and crunchy toasted pecans. They’re baked in a muffin tin, making them an easy dessert for holidays!

I love making mini cheesecakes , like my mini chocolate cheesecakes, mini pumpkin cheesecakes, or mini oreo cheesecakes because they’re so much easier than baking a traditional cheesecake. There’s no water bath required, they bake in about 20 minutes, and you get perfectly portioned individual desserts. Plus, they’re easy to make ahead, which is always a bonus when I’m entertaining!
For this recipe, I took my classic mini cheesecake recipe and gave it a turtle-inspired twist. The cheesecake filling is made with full-fat cream cheese and sour cream for a rich, smooth texture. Then I added three of my favorite toppings: caramel, chocolate ganache, and toasted pecans. The combination of creamy cheesecake, chocolate, and buttery caramel is hard to resist!

Why This Recipe Works
- No water bath needed. Unlike traditional cheesecake, these mini cheesecakes bake right in a muffin tin without the hassle of a water bath.
- Perfect individual servings. This recipe makes 18 mini turtle cheesecakes, making them great for holidays, parties, and special occasions.
- Rich and creamy filling. Full-fat cream cheese and sour cream create a smooth cheesecake filling with just the right amount of tang.
- Three delicious toppings. Caramel sauce, chocolate ganache, and toasted pecans give these mini cheesecakes their classic turtle candy flavor.
- Easy to make ahead. Prepare the cheesecakes a day or two in advance, then add the toppings before serving.
Ingredients You’ll Need
For the Graham Cracker Crust
- Graham crackers: Crush into fine crumbs so the crust holds together. You can substitute vanilla wafers or digestive biscuits.
- Unsalted butter: Melt the butter before mixing it with the graham cracker crumbs. Salted butter also works.
- Granulated sugar
For the Cheesecake Filling
- Cream cheese: Use full-fat block-style cream cheese, not the spreadable kind sold in tubs. Spreadable cream cheese can contain extra air and moisture that affect how your cheesecakes set. Make sure it’s softened to room temperature before mixing. Read How To Soften Cream Cheese.
- Granulated sugar
- Vanilla extract
- Sour cream: I recommend full-fat sour cream for the creamiest texture.
- Large eggs: Bring the eggs to room temperature so they incorporate smoothly into the filling. Read How To Get Room Temperature Eggs Fast.
For the Turtle Topping
- Caramel sauce: Homemade caramel sauce or a thick, good-quality store-bought caramel sauce will work.
- Chocolate ganache or hot fudge: I love using homemade chocolate ganache but a hot fudge sauce works just as well for a rich chocolate topping. Let it cool slightly before adding it to the cheesecakes.
- Pecans: Toast the pecans before chopping them to bring out their nutty flavor and give the cheesecakes extra crunch.

How to Make Mini Turtle Cheesecakes
These mini turtle cheesecakes are made in three parts: the graham cracker crust, cheesecake filling, and turtle toppings.
Step 1: Prepare the Graham Cracker Crust
Start by preheating your oven to 350°F (180°C). Line two standard muffin pans with 18 cupcake liners.
Add the graham crackers to a food processor and pulse until you have fine crumbs. You don’t want large pieces of graham cracker because they can make the crust harder to press together.
Add the melted butter and granulated sugar, then pulse again until the mixture resembles wet sand.

Spoon about a tablespoon of the graham cracker mixture into each cupcake liner. Use the bottom of a small glass, measuring cup, or your fingers to gently press the crumbs into an even layer. You want the crust firmly pressed together, but don’t pack it down too tightly or it can become hard after baking.
Bake the crusts for about 5 minutes, until slightly darker and fragrant. Remove from the oven and reduce the oven temperature to 325°F (160°C). Prebaking the crust helps it hold together and prevents it from becoming soggy once the cheesecake filling is added.

Step 2: Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until completely smooth. I like using my stand mixer fitted with the paddle attachment or my hand mixer works just as well.
Make sure your cream cheese is at room temperature before starting. Cold cream cheese won’t blend as smoothly and can leave little lumps in your cheesecake filling. Stop and scrape down the bottom and sides of the bowl with a spatula to make sure everything is evenly mixed.

Next, add the sour cream and vanilla extract. Mix until smooth and combined.

Add the eggs one at a time, mixing on low speed just until each egg is incorporated.
Once the eggs are added, avoid overmixing. Too much air in the batter can cause the cheesecakes to puff up in the oven and then sink or crack as they cool.

Step 3: Fill and Bake the Cheesecakes
Divide the cheesecake batter evenly among the prepared muffin cups, filling each about three-quarters full.
I like using a medium cookie scoop to portion the filling. It makes the process easier and helps ensure the cheesecakes bake evenly.
Bake at 325°F (160°C) for 18–20 minutes. The edges should look set, but the centers may still have a slight jiggle when you gently shake the pan. Don’t wait until the centers are completely firm. Cheesecakes continue to set as they cool, and overbaking can cause a dry texture or cracks.
Remove the cheesecakes from the oven and let them cool at room temperature for about one hour. Transfer them to the refrigerator and chill for at least two hours, or until completely firm.

Step 4: Toast the Pecans
While the cheesecakes are chilling, toast your pecans. Spread the pecans in a single layer on a baking sheet and bake at 350°F (180°C) for about 5–8 minutes, stirring halfway through.
Keep a close eye on them because nuts can go from perfectly toasted to burnt quickly! You’ll know they’re ready when they smell fragrant and have deepened slightly in color. Let the pecans cool completely before chopping.
Toasting the pecans is one of my favorite tricks for making these mini turtle cheesecakes even better. It brings out their natural nutty flavor and gives them a crisp texture that pairs perfectly with the creamy filling and gooey caramel.

Step 5: Add the Turtle Toppings
Once the mini cheesecakes are completely chilled, remove them from the muffin pans.
Spoon or drizzle caramel sauce over each cheesecake. Next, add a drizzle of chocolate ganache. If your ganache has thickened too much, gently warm it until it’s pourable, then let it cool slightly before using.
Finish each cheesecake with a sprinkle of chopped, toasted pecans.
I recommend adding the toppings shortly before serving so the pecans stay crunchy and the cheesecakes look their best.

Recipe Tips
- Use full-fat block cream cheese, not the tub. Spreadable cream cheese often contains extra air, moisture, or other ingredients that can affect the texture. Full-fat block cream cheese helps create a thick, creamy filling that sets properly.
- Don’t overmix the cheesecake batter. Once you add the eggs, mix on low speed just until combined. Incorporating too much air can cause the cheesecakes to rise and then collapse or crack as they cool.
- Don’t overbake the cheesecakes. The centers should still have a slight jiggle when you remove them from the oven. They’ll continue setting as they cool and chill in the refrigerator.
- Toast the pecans before adding them. Toasting brings out their nutty flavor and gives the cheesecakes a delicious crunch. Let them cool before chopping and sprinkling over the tops.
- Chill completely before adding the toppings. Warm cheesecakes won’t have the same firm, creamy texture. Chilling also helps prevent the caramel and chocolate ganache from becoming too runny when added.

How to Store Mini Turtle Cheesecakes
Room Temperature: Because these cheesecakes contain cream cheese, sour cream, and eggs, they should be stored in the refrigerator. Don’t leave them at room temperature for more than two hours.
Refrigerator: Store the mini cheesecakes in an airtight container in the refrigerator for up to 4 days. For the best texture, I recommend storing them without the toppings and adding the caramel, ganache, and pecans before serving.
Freezer: These mini cheesecakes freeze beautifully! Once completely cooled and chilled, freeze the plain cheesecakes on a baking sheet until firm. Wrap each cheesecake individually in plastic wrap, then transfer them to a freezer-safe container or bag. Freeze for up to 3 months.
Be sure to label your container with the recipe name and date so you know when you made them.
Thawing: Transfer the frozen cheesecakes to the refrigerator and let them thaw overnight. Add the caramel sauce, chocolate ganache, and toasted pecans just before serving.
I don’t recommend reheating these cheesecakes. They’re best served chilled.
Recipe FAQs
Absolutely! In fact, I recommend making them ahead because they need time to chill and set properly. You can bake the cheesecakes up to two days in advance and store them covered in the refrigerator. Add the caramel sauce, chocolate ganache, and toasted pecans shortly before serving. This makes them a great make-ahead dessert for Thanksgiving, Christmas, and other holiday gatherings.
Cracks can happen when cheesecake batter is overmixed or the cheesecakes are overbaked.
Make sure your ingredients are at room temperature, mix the eggs in on low speed, and remove the cheesecakes when the edges are set but the centers still have a slight jiggle. The good news? Even if your mini cheesecakes crack, the caramel, chocolate ganache, and pecans will cover them right up!
A little sinking is normal as cheesecakes cool. However, excessive sinking can happen if too much air gets incorporated into the batter. The cheesecakes puff up during baking and then collapse as they cool. To prevent this, avoid overmixing after adding the eggs.
