Lucky charms rice krispie treats are an easy no bake treat for St. Patrick’s day. These lucky charm treats are a fun twist on traditional rice krispie treats made on the stovetop! Easy no bake treat made in minutes!

Cereal treats are always such a fun nostalgic treat that my husband and I can’t ever seem to grow out of. I mean, tell me we’re not alone? Gooey marshmallow treats, what’s not to love? Like these brown butter rice krispie treats, or my popular recipe for peanut butter rice krispie treats!

And so when I decided to make these homemade lucky charms treats for St. Patrick’s day with all of it’s colorful marshmallows my husband was definitely super excited. And may have devoured almost all of them himself.

These lucky charm bars are made the same way I make my rice krispie treats by melting butter on the stovetop and stirring in marshmallows. I add in a little vanilla extract and salt to make these extra special. And then I stir in both Lucky charms cereal, and rice krispies. 

When they get pressed into the pan I top with extra lucky charms marshmallows for a treat that’s ready in minutes!

Ingredients Needed

  • Unsalted butter – You can also use salted butter. Just reduce the added salt. 
  • Marshmallows – You can use regular large marshmallows or mini marshmallows.
  • Salt – I love using sea salt for the best flavor and texture. Kosher salt or table salt can also be used.
  • Vanilla extract – Pure vanilla extract is best but imitation vanilla can also be used. A little vanilla brings out the flavor of the marshmallow.
  • Rice krispies cereal – I used classic rice krispies, or crisp rice cereal but you could also just use all Lucky charms but I liked texture of adding in some rice krispies.
  • Lucky charms– I reserve some marshmallows to sprinkle on top.

How To Make Lucky Charms Krispies Treats

Lightly spray 9×9 square pan with nonstick cooking spray or line with with aluminum foil or a piece of parchment paper. You can use a smaller pan if you want thicker treats.

In a large saucepan over low heat, melt butter.

When butter is melted, add the marshmallows. Stir with a rubber spatula or a wooden spoon until melted.

Remove from heat. Stir in vanilla extract and salt.

Stir in lucky charm cereal and rice krispie cereal to the melted marshmallows.

Spread the cereal mixture into the prepared pan (use a piece of saran wrap lightly sprayed with cooking spray) and press into the pan in an even layer. Top with extra marshmallows for presentation.

Let sit for 1 hour. Cut into squares and enjoy.

Recipe Tips

  • Watch the heat. You don’t want to turn up the heat too high or you will burn the butter and marshmallows. Keep the stove on a medium-low heat so the butter and marshmallows don’t burn.
  • Stir with a wooden spoon or spatula. This will make it easier to mix the marshmallow mixture together. 
  • Use a large pot to hold all the ingredients. This makes a big mixture so make sure to use a big enough of a pot like a large dutch oven.
  • Immediately stir in the cereal and spread into the pan right away. The mixture can cool and set quickly.
  • Do not press down too hard when pressing into the pan. Or they can become too compact and tough.
  • Store in an airtight container. Store correctly so they don’t dry out and don’t store in the fridge or they will dry out.
  • Line your baking dish. Line the pan with tinfoil or parchment and spray with cooking spray so they don’t stick (I prefer lining the pan so I can easily lift them out and have one less dirty dish).
  • Press into the pan the easy way. Use wax paper, parchment paper, plastic wrap, or the butter wrapper to easily press these into the pan.

Recipe Variations

  • Use vanilla bean paste – For more vanilla flavor, try using vanilla bean paste instead of vanilla extract.
  • Use all Lucky Charms I liked the combination of using both cereals but you could just use Lucky charms.
  • Stir in white chocolate chips – For a little chocolate flavor, try stirring in some white chocolate chips next time! Or try dipping in melted white chocolate like I did for my strawberry rice krispie treats.

Storage Instructions

I keep them covered at room temperature and they keep for up to 3 days. Do not store in the fridge because they will become dried out. Store in an airtight container so they don’t dry out and don’t store in the fridge or they will dry out.

I don’t really recommend freezing rice krispie treats as they don’t thaw and have the same texture. But if you do want to try freezing be sure to wrap between layers of parchment or wax paper and place in a freezer bag or container and freeze for up to 2 months. Thaw at room temperature before serving.

Recipe FAQ’s

Why did my rice krispie treats get hard?  

This could be for a few reasons. First you may have heated up the marshmallows and butter over too high of a heat. Be sure to go low and slow this with heat no higher over medium-low. This could be if you used stale rice krispie treats or marshmallows. You may have also pressed them too much in the pan as well.

Do I need to bake rice krispie treats? 

Nope! These are no bake treats. You will make them on the stovetop and press the mixture into the pan.

  • 10 ounces marshmallows
  • ½ teaspoon vanilla extract

  • 1 cup rice krispie cereal
  • 5 cups Lucky charms

Instructions

  • Melt butter in a very large pot on low heat. 6 Tablespoons (85 g) unsalted butter
  • When butter is melted, add marshmallows. Stir with a rubber spatula or a wooden spoon until melted. 10 ounces marshmallows
  • Remove from heat. Stir in vanilla extract and salt. ½ teaspoon vanilla extract ⅛ teaspoon salt
  • Stir in rice krispies and Lucky charms. 1 cup rice krispie cereal 5 cups Lucky charms
  • Spread in pan and press into an even layer.
  • Let rest for 1 hour.  Cut into squares and enjoy.

Notes

  • Storage: Keep covered and store at room temperature for up to 3 days.
  • Freezing: I do not recommend freezing rice krispie treats. The texture is not the same after thawing.
  • Butter – Salted butter can have varying amounts and might make these very salty in the end. Not what we want! So use unsalted butter. If you only have salted butter than reduce or omit the salt.
  • Cooking spray– These can be tricky to press down into the pan because of how sticky they are. So lightly spray a piece of plastic wrap and use that to press the mixture down into the pan OR spray your hand with cooking spray and press them down with your hand.
  • Do not press down too much – You do need to press them down somewhat but if you press down too much you could create a rice krispie treat that ends up too dense.
