These mini lemon pies are everything I love about classic lemon pie, just in an adorable individual size. They start with a buttery graham cracker crust, are filled with a silky smooth lemon filling made with sweetened condensed milk, and finished with a generous swirl of homemade whipped cream. They’re bright, creamy, and the perfect make-ahead dessert for spring and summer gatherings.

I love a good lemon pie, but sometimes you don’t need an entire 9-inch pie sitting in your refrigerator. That’s exactly why I tested this recipe. I wanted all the flavors of a classic lemon pie in a handheld dessert that’s easy to serve at parties, showers, BBQs, or anytime you want a dessert that feels a little special. Kind of like my mini key lime pies (also a bit hit at a get together!)

One of my favorite things about this recipe is how simple the filling is. Just a handful of ingredients that whisk together in minutes—no stovetop, no complicated techniques, and no worrying about tempering eggs. The fresh lemon juice gives these pies the perfect balance of sweet and tangy, while the sweetened condensed milk creates that rich, creamy texture everyone loves.

And if you’ve been around here for a while, you know I never skip homemade whipped cream. It only takes a few minutes to make, tastes so much better than anything from a can, and balances the bright lemon filling perfectly.

Ingredients

For the Graham Cracker Crust

  • Graham cracker crumbs: Crush them into fine crumbs so the crust presses together easily with either a food processor or place in a zip top bag and crush with a rolling pin. You can also use digestive biscuits or Nilla wafers.
  • Granulated sugar: You can also use brown sugar.
  • Unsalted butter: Salted butter also works.

For the Lemon Filling and assembly

  • Sweetened condensed milk
  • Fresh lemon juice: Freshly squeezed juice gives the best flavor. Bottled lemon juice won’t taste nearly as bright. You can also add a little lemon zest if you want.
  • Egg yolks: Let them come to room temperature so they mix more easily.
  • Whipped cream: for serving

How To Make Mini Lemon Pies

Position the rack in the center of the oven. Preheat your oven to 350oF.

You want to crush the graham crackers into crumbs first. I like to either use my food processor or place them in a zip-top bag and smash with a rolling pin. Then pour the crumbs into a large bowl.

Then add the granulated sugar give it a quick stir. Then add the melted butter until the crumbs resemble wet sand.

Divide the mixture between your paper-lined muffin cups and firmly press it into the bottom and slightly up the sides using the bottom of a shot glass or measuring cup. Then bake for 5 minutes in the preheated oven. Baking the crust for a few minutes before adding the filling helps it hold together and keeps it from becoming soggy.

While the crust cools slightly, whisk together the sweetened condensed milk, fresh lemon juice, and egg yolks until smooth. For more lemon flavor you can add 1-2 teaspoons of fresh lemon zest.

The acid from the lemon juice immediately begins thickening the mixture, giving you a silky filling without any stovetop cooking. Fresh lemon juice really makes a difference here, giving the pies a bright, fresh flavor.

Pour the lemon filling into each crust, filling them to the top. Bake just until the edges are set but the centers still have a slight wobble. Resist the urge to overbake—the filling will continue to firm up as the pies cool, leaving you with a creamy, smooth texture.

Let the pies cool to room temperature before transferring them to the refrigerator. Chilling is essential because it gives the filling time to fully set, making the pies easy to remove from the liners.

Just before serving, whip the cold heavy cream with the powdered sugar and vanilla until stiff peaks form. Using a chilled mixing bowl helps the cream whip faster and creates a light, fluffy topping that holds its shape when piped.

Pipe or spoon the whipped cream onto each mini pie and garnish with fresh lemon zest or a thin lemon slice if you’d like. They’re easiest to serve straight from the refrigerator, making them a perfect make-ahead dessert for parties and holidays.

Recipe Tips

  • Press the crust firmly enough that it holds together, but don’t compact it too much or it can become hard after baking.
  • Use a shot glass to press the crust into the muffin cups.
  • Always use freshly squeezed lemon juice for the brightest, freshest lemon flavor.
  • The pies are done when the centers still look slightly soft. They will continue setting as they cool.
  • Chill the pies completely before removing the paper liners for the cleanest presentation.
  • For the prettiest whipped cream, wait until just before serving to pipe it onto the pies.

Storage

Store the baked mini lemon pies (without whipped cream) covered in the refrigerator for up to 4 days. Add the whipped cream just before serving for the freshest presentation.

You can freeze the baked pies without the whipped cream for up to 2 months. Wrap each pie individually in plastic wrap, then place them in a freezer-safe container or zip-top bag. Thaw overnight in the refrigerator before serving.

Ingredients

For the crust:

  • 1 ½ cups (180 g) graham crackers (about 12 graham crackers)
  • 3 Tablespoons granulated white sugar
  • 7 Tablespoons (99 g) unsalted butter melted

For the pie:

  • 28 ounces (2 14-ounce cans) sweetened condensed milk
  • ¾ cup (180 ml) fresh lemon juice
  • 4 large egg yolks room temperature

For the whipped cream:

  • 1 cup (240 mL) heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Prep your oven. Preheat the oven to 350°F (180°C) and place a rack in the center of the oven. Line two muffin tins with muffin paper liners.
  • Make the crust. In a food processor, grind the graham crackers, sugar and salt into fine crumbs. Pour the crumbs into a large bowl and stir in the melted butter until the crust comes together. Press the crust evenly into each cup (about 1 ½ tablespoons each). I do this with the bottom of a shot glass. Bake for 5 minutes until the crust is golden brown and baked through. Remove from the oven and let cool on a wire rack. 1 ½ cups (180 g) graham crackers 3 Tablespoons granulated white sugar 7 Tablespoons (99 g) unsalted butter
  • Make the filling. In a large bowl, whisk together the condensed milk, lemon juice, egg yolks, until smooth. Pour into the partially baked crust.28 ounces (2 14-ounce cans) sweetened condensed milk ¾ cup (180 ml) fresh lemon juice 4 large egg yolks
  • Bake the pies. Bake for 15 minutes, until the pie is set but still a little wobbly in the middle when you shake it. Remove from the oven and let cool for one hour on a wire rack then store in the fridge to cool completely. Be sure to cover the top of the pie before storing with tin foil or plastic wrap. Store in an airtight container in the fridge for up to 2 days.
  • Make the whipped cream: Place your mixing bowl in your freezer for about 10 minutes. You can make this in your stand mixer, electric hand mixer, or with a whisk. In the chilled bowl combine the cream, confectioners sugar, and vanilla and whip until the cream holds stiff peaks. When you take the beaters or whisk out of the bowl the peaks should stand on their own and the whipped cream should be billowy and fluffy. I store my whipped cream in an airtight container and it holds up well for up to 3 days. Right before serving, you can pipe or spread a generous layer of whipped cream on top of the pie before serving. 1 cup (240 mL) heavy cream 2 tablespoons powdered sugar 1 teaspoon vanilla extract
